Sweet Potato Soup

Here's one of my favourite hot desserts. I have been preparing this for myself everyday for the past week. Easy-peasy!!! Unfortuately, Ying Ying refused to try even though I offered it to her everytime I ate it. :/ (Note: Photo below looked a bit blurry because of the rising steam - I captured it while it was still hot.)



Ingredients:
Australian sweet potato (can get fr NTUC)
Ginger
Pandan leaf
Water
Sugar (I use SIS raw sugar for its unique taste)

Method:
1) Skin and cut sweet potato and ginger. Wash and knot pandan leaf.
2) Put sweet potato, ginger and pandan leaf to boil till potato turns soft (about 15mins).
3) Sweeten as desired. Serve hot.
