Ying Ying likes to eat her rice with soup rather than gravy. The soup probably makes it easier for the rice to go down. Unfortunately, I am not very good in soup preparation since I am not really a soup person to begin with. That is one of the reasons we keep going back to my IL's place to have dinner since they always have soup for her. But lately, I have decided to start learning how to cook good nourishing soup so that we need not travel so frequently which can be rather tiring for everybody.
Ok, I admit I am too proud to ask my MIL on how to cook - what if she says why go through the trouble when we can just go to her place to eat? I can't ask my mum either because she is the shortcut type who uses cube stock in her cooking which I dislike. Luckily, my cousin, Ah B, gave me some tips on how to prepare good soup when we met up during the CNY. Here goes:
Ah B's Soup
(Makes 2-3 servings)

Luckily, my cousin, Ah B, gave me some tips on how to prepare good soup when we met up during the CNY. Here goes:
Ah B's Soup
(Makes 2-3 servings)
Stock:
200-300g pork ribs
1 tbsp dried scallops (she said the smallest ones give the best flavour)
1 pc dried abalone
6-8 red dates (choose the type with seeds)
1 big pot of water
1 tbsp wolfberries
Salt
Ingredients:
1 carrot
1 potato
1 sweet corn
1/2 slice winter melon
1 stalk celery
(Other suggestions: e.g. Radish/Green Carrot)
Method:
1) Boil some water to blanch pork ribs (to remove blood and excess oil so as to make a clear soup).
2) Cut and put all ingredients (except wolfberries and salt) into the big pot of water. Bring to a boil then set fire to the lowest. Half-cover and let it simmer for at least 2-3 hours.
3) Add in wolfberries in the last hour of cooking.
4) Taste and season with salt (optional) before switching off fire.
5) Serve with rice. Yummy!
Tips:
* Any leftover soup can be used to cook instant noodles (I use myojo; without adding the seasoning, of course). Tastes absolutely scrumptious!!
** To make the soup a more wholesome meal, you can throw in tofu or hardboiled egg for additional protein. Tada!
Verdict? Husband liked the soup - he said it was better than the one done by his mother. Heheheh........
