Soft & Crumbly Raisin Scones

I love scones, especially those from Four Leaves bakery. So I was inspired to bake some scones on Monday after coming across this interesting recipe from this wonderful website. It is not very traditional because it calls for cake flour and a lot of cream cheese. Amazingly, to my delight, it is even better than the Four Leaves version which I have eaten for years! Try it and say goodbye to all hard and dry scones forever! ^_^

Ingredients: (Makes 15 medium scones)

125g flour

125g cake flour

1 tbsp baking powder

1/2 tsp salt

120g cream cheese (at room temperature)

30g butter

90ml milk

1 egg, beaten

80g raisins

1 beaten egg for glazing

1 tbsp melted butter for brushing

Method:

1) Preheat oven to 200 degree celsius.

2) Sift both flour and baking powder. Mix in salt.

3) Beat cream cheese and butter till smooth. Add in flour mixture and mix till it resembles fine crumbs.

4) Mix in egg and milk and pour into (2) to form a soft and moist dough consistency. Lightly mix in raisins.

5) Shape dough into small rounds and glaze the top with beaten egg.

6) Bake for 9 mins.

7) Remove from oven and quickly brush on melted butter. Return and bake for another 5 mins.

8) Leave to cool for 10mins.

9) Serve warm with butter and jam / golden syrup / maple syrup. Enjoy! :)
