Banana Chocolate Chip Muffins

I adapted this recipe from allrecipes.com.


Ingredients A (dry):
220g plain flour
150g sugar
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt

Ingredients B (wet):
1 egg
1/2 cup or 120ml vegetable oil
1 small cup Marigold low-fat plain yoghurt
1 tsp vanilla essence

Ingredients C:
1 cup mashed ripe bananas (I used 2 big del monte bananas)
1/2 to 3/4 cup mini semi-sweet chocolate chips
1/2 cup chopped walnuts (optional)

Oven temperature: 180 degree celsius
Baking Time: 20-22mins
Method:
1) Sift dry ingredients A together.
2) Make a well and pour in ingredients B till just combine. (Do not overstir.)
3) Fold in the ingredients C.
4) Spoon out into cake cases till about 4/5 full.
5) Put to bake till golden brown.

I like making muffins because it is so easy and it doesn't call for a need of the big, cumbersome electric mixer which is troublesome to set up and wash. You just need a spoon and a big mixing bowl. I got Pum Pum to help me mash the bananas and do some stirring. Ying Ying helped me line the patty tin with cake cases and carried the tray to the oven.

Though Ying Ying is a non fruit-eater, she doesn't mind bananas in her muffins - thank goodness! 1 tsp of mashed bananas in each muffin is better than nothing right?

It was so gratifying to watch the girls savouring the home-made muffins - Pum Pum ate 1 and Ying Ying ate 2 plus 1 more after dinner. Just imagine all the goodness of the bananas (fibre) and yoghurt (protein & calcium) going into their system! Ying Ying even said, "Your baking is good!" which made me so happy. ^_^
