Crunchy Chocolate Chip Cookies

This recipe is taken off Baking Mum's blog. I am recording here just for my own reference. Heehee...Thank you, baking mum! :)

INGREDIENTS
125g soft butter
75g caster sugar
60g brown sugar
1 egg
1/2 tsp vanilla essence
150 plain flour
45g cornflour
1/2 tsp bicarbonate of soda
Pinch of salt
60g crushed walnuts (optional)
125g Hersheys semi-sweet mini chocolate chips

METHOD
1) Preheat oven to 170 degree celsius. Line/grease if you are not using non-stick baking tray.
2) Cream butter with caster and brown sugar.
3) Beat egg with vanilla essence. Add in beaten egg mixture into the creamed mixture gradually.
4) Mix in the plain flour, cornflour, bicarbonate of soda and salt on low speed.
5) Fold in walnuts and chocolate chips.
6) Spoon out mixture by teaspoonfuls. Level them a little using a fork.
7) Put to bake on middle shelf for about 12-15mins.

NOTE
* I used 60g caster sugar and 50g brown sugar because my mil is diabetic. The effect was a tad tasteless. :/ Would prefer it to be sweeter. Will stick to the original recipe next time. After all, diabetics aren't supposed to eat cookies in the first place what! :p
** I forgot to add in bicarbonate of soda but they still turned out fine.
*** The walnuts added crunch to the cookies but the walnut taste is a bit too strong for my liking but my sil likes it. Will try to do this again without walnuts or reduce the walnuts by half.
