Here's another recipe for a hungry family of 3. I cooked this for lunch yesterday and husband said it's yummy. Unfortunately, Ying Ying only managed to eat like 2 tbsps (13 pcs of macaroni to be exact) and I hope that's because it was her 1st time eating it!
I ran out of elbow macaroni so I had to make do with shell macaroni. Turned out to be quite good, surprisingly! The texture of shell macaroni is more chewy compared to the elbow ones. It is also smaller in size so it was easier for me to put it into Ying Ying's mouth.
There are many reasons why I like this dish - 1) it is tasty ; 2) pretty easy to prepare ; 3) preparation does not involve fish & meat (which I dread) ; 4) it makes a balanced meal (with ingredients from all the 3 food groups) ; 5) plus it is cheap - I estimated the cost price to be less than $2. (It would have cost us about $6-$7 to ta bao.) Will definitely cook this again. :)
